From the beginning, food has meant more in China than simple nourishment. It was a common topic of scholars and philosophers. They wrote about the importance of food, but not about specific types of foods that were eaten.

The few known foods of ancient China were the soybean and millet. Domesticated pigs and chickens were also an important part of their diet. The ancient Chinese had many ways to prepare food; steaming, stewing, and flash-frying. They salted meat and pickled vegetables. They also had brewing technology which they used to create many distinct flavors.

During the Han Dynasty, 206 BC to 220 AD, trade routes with ancient Egypt and India opened; then rice, barley, and wheat came to China from the west. This was a period of prosperity, known today as the "period of 5 grains".  It may have taken ancient China longer than others to acquire new foods, but it did not take them long to adapt these new foods to their own unique style. A style that can be enjoyed today with the following recipes.
